Egg White Pancakes

Procedure

1. In a bowl, beat the egg. While continuing to mix, add the flour and baking soda. Add the yogurt and stir until frothy and lump-free.
2. Lightly heat a nonstick skillet over medium-low heat. Make sure the pan is hot before pouring in the batter.
3. Pour a ladleful of the mixture into a preheated nonstick skillet. Cook the pancake for about 2-3 minutes, or until bubbles begin to form on the surface.
4. Serve the pancakes with jam, fresh fruit, nuts, spreads, etc.

Tip

In addition to fresh fruit and syrups, also consider adding chopped nuts, chia seeds, or nut butters for an extra touch of flavor and nutrients.
