For the pancakes:
1. Mix the pancake mix and water until you have a smooth, thin batter.
2. Slice the banana into thin disks, then dip it into the batter to coat it.
3. Heat the coconut oil in a large frying pan over medium heat. Fry each banana bite for one minute on each side or until golden brown.
For the peanut butter sauce:
1. mix all ingredients and pour over the pancake bites.
If you wish to increase the protein content and texture, add an egg to the pancake batter.
If you do not have Pancake Protein on hand, you can use other protein powders such as whey protein, vegan protein, or casein protein depending on your preference.
